The suspect, 26, is expected to appear at Dunfermline Sheriff Court tomorrow (Monday).
Police were called to a report of a 44-year-old man having been seriously injured following a disturbance in a restaurant on High Street in the town.
Emergency services attended and he was taken by ambulance to the Victoria Hospital, Kirkcaldy, where he died a short time later.
His name won't be released until the family are made aware.
A 26-year-old man has been arrested and charged in connection with the incident.
Officers are not looking for anyone else in connection with the incident.
